How to choose delicious mung beans for making sweet soup.

  • You should choose mung beans that are a vibrant green color, firm, free from pests, and have the characteristic aroma of mung beans.
  • If you're buying whole mung beans, choose those that are plump, uniform in size, green inside, and free from pests or damage.
  • Good quality mung beans have white spots on the underside, are plump but not black or shriveled.

  • 1

Rinse the mung beans thoroughly.

  • First, rinse 150g of whole mung beans with water 3-4 times to remove the husks and any shriveled beans. Then, put the beans in a pot and pour boiling water over them until they are completely submerged.
  • Note: To prevent the beans from becoming mushy when cooked, you shouldn't soak them; just rinse and wash them thoroughly!

  • After about 10 minutes, add another 200ml of water to the pot of beans and cook until the beans are tender and the skin is slightly cracked.
  • Next, put 100g of rock sugar and 2 cups of filtered water (about 300ml) into a pot and heat until the sugar is completely dissolved.
  • Next, pour the cooked sugar syrup into the pot of mung beans and mix 1 tablespoon of tapioca starch with 100ml of filtered water and pour it into the pot of dessert to thicken the mixture. Continue to simmer for 2-3 minutes, then turn off the heat.
  • Note: While cooking the beans, stir gently and in one direction to minimize the risk of the beans breaking apart!
