Ingredients for Dried Pork Serves 4

Pork 500 gr (you should choose lean pork) Crushed lemongrass 1 stalk Salt 1 teaspoon Fish sauce 3 tablespoons Shallots 3 bulbs (thinly sliced) Sliced ginger 1 slice Pepper 1/2 teaspoon (if desired) Cold water 100 ml Sugar 40 gr

How to make Dried Pork

  • Prepare the pork

    Wash the pork thoroughly and cut it into large pieces. Then, boil about 1.5 liters of water with lemongrass, ginger, salt, and 1 tablespoon of fish sauce.

    When the water boils for about 5 minutes, add the pork and cook until just done. Turn off the heat immediately to prevent the pork from losing its sweetness. Remove the pork to a plate. Once slightly cooled, shred the pork into thin strips.

  • Make dried pork

    Place a pan on the stove, add about 200 ml of cooking oil, and wait until it's slightly hot. Add sliced shallots and fry until fragrant. When the shallots are golden and crispy, remove them to a bowl. Now, add the shredded pork to the pan and fry (in 3 batches). Remember to stir-fry until the pork is golden and crispy, then remove it to a plate lined with oil-absorbing paper.

    Next, add sugar and water to the pan, place it back on the stove, and cook until the sugar dissolves over low heat. Then, add fish sauce and continue cooking until the fish sauce thickens slightly (about 7 minutes). Finally, add the fried pork and 1/2 teaspoon of pepper, and stir well until the fish sauce is completely absorbed by the pork. Stir until the fish sauce dries up, then turn off the heat.

  • Finished product

    With this incredibly simple method, you now have a delicious, chewy, and spicy dried pork dish, ready to be enjoyed as a snack or even sandwiched in bread for breakfast. Wishing you success!
